- 1 pound ground chicken
- ½ cup Italian-style breadcrumbs
- 1 beaten egg
- 2 cloves minced garlic (or 1 teaspoon garlic powder)
- 1 teaspoon onion powder
- ¼ cup grated Parmesan cheese
- Handful of chopped parsley
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground chicken, breadcrumbs, beaten egg, garlic, onion powder, Parmesan, parsley, salt, and pepper.
- Mix until just combined, then roll into meatballs about 1 inch in diameter.
- Place on a parchment-lined baking sheet and bake for 20-25 minutes until cooked through and browned.
- Serve with marinara sauce, in spaghetti, or in soft taco shells with avocado and salsa.
Notes
You can substitute ground chicken with turkey or lean pork. Adjust seasoning and herbs based on your taste preferences.
