Ingredients

  • 1 cup breadcrumbs
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese (optional)
  • Salt, to taste
  • Pepper, to taste
  • 1 tbsp Worcestershire sauce

Instructions

  1. Preheat your oven to 400°F (200°C) or heat olive oil in a skillet over medium heat.
  2. In a large bowl, combine the ground chicken, breadcrumbs, egg, minced garlic, chopped onion, and optional Parmesan cheese. Season with salt, pepper, and Worcestershire sauce, then mix until just combined.
  3. Form the mixture into small meatballs, about the size of golf balls.
  4. If baking, place the meatballs on a lined baking sheet and bake for about 20 minutes until golden brown.
  5. If sautéing, cook the meatballs for about 8-10 minutes in the skillet, turning occasionally until browned on all sides.
  6. Optionally, simmer the meatballs in marinara sauce for a few minutes before serving.
  7. Serve hot with spaghetti, on a sub roll, or alongside veggies for a wholesome meal.

Notes

These meatballs freeze beautifully; allow them to cool, then freeze individually before storing in a freezer-safe bag for up to 3 months.
