Ingredients

  • 1 lb ground turkey
  • 1 cup rice (white, brown, or jasmine)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 2 tbsp soy sauce
  • 2 cups broth (chicken or vegetable)
  • 2 tbsp olive oil or butter
  • Fresh parsley or cilantro for garnish

Instructions

  1. Dice the onion and bell peppers, and mince the garlic.
  2. In a large skillet over medium heat, add olive oil. Sauté the onion for 2–3 minutes, then add the bell pepper and garlic; continue sautéing for another 3–4 minutes.
  3. Push the vegetables to the side and add ground turkey. Cook until no longer pink, about 5–7 minutes.
  4. Sprinkle in spices and soy sauce, then stir to combine and let flavors meld for 2 minutes.
  5. If using uncooked rice, add it now along with the broth. Bring to a boil, then reduce heat, cover, and let simmer according to rice package instructions.
  6. Fluff the rice with a fork and stir in any extra herbs or veggies before serving.
  7. Garnish with fresh herbs and serve warm.

Notes

For added flavor, consider topping with Greek yogurt or avocado. This dish also freezes well for up to 3 months.
