A comforting one-pot meal featuring ground turkey sautéed with spices and served over fluffy rice, perfect for busy weeknights.

- 1 lb ground turkey
- 1 cup rice (white, brown, or jasmine)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup bell peppers, diced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp black pepper
- 2 tbsp soy sauce
- 2 cups broth (chicken or vegetable)
- 2 tbsp olive oil or butter
- Fresh parsley or cilantro for garnish
Instructions
- Dice the onion and bell peppers, and mince the garlic.
- In a large skillet over medium heat, add olive oil. Sauté the onion for 2–3 minutes, then add the bell pepper and garlic; continue sautéing for another 3–4 minutes.
- Push the vegetables to the side and add ground turkey. Cook until no longer pink, about 5–7 minutes.
- Sprinkle in spices and soy sauce, then stir to combine and let flavors meld for 2 minutes.
- If using uncooked rice, add it now along with the broth. Bring to a boil, then reduce heat, cover, and let simmer according to rice package instructions.
- Fluff the rice with a fork and stir in any extra herbs or veggies before serving.
- Garnish with fresh herbs and serve warm.
Notes
For added flavor, consider topping with Greek yogurt or avocado. This dish also freezes well for up to 3 months.
