- 1 cup white rice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup bell peppers, chopped
- 1 cup mushrooms, sliced
- 2 tablespoons soy sauce
- 2 cups chicken or vegetable broth
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- Fresh parsley or green onions for garnish
Instructions
- Rinse the rice and cook according to package instructions, usually about 20 minutes in boiling water or broth.
- In a large skillet, heat a drizzle of olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes until soft.
- Add minced garlic and stir for another minute.
- Introduce ground turkey, breaking it apart and allowing it to brown for 5-7 minutes, draining excess fat as needed.
- Add chopped mushrooms and bell peppers, cooking until softened (about 5 minutes).
- Drizzle soy sauce over the turkey mixture and sprinkle with seasonings; stir well and let the sauce caramelize.
- Serve the turkey mixture over rice, garnished with fresh herbs.
Notes
You can substitute ground turkey with ground chicken or a plant-based meat alternative. Feel free to use leftover vegetables or change seasonings based on taste.
