Ingredients

- 1 can of tuna, drained
- 1 can of garbanzo beans, rinsed and drained
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley or cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Rinse the garbanzo beans under cold water and drain.
- Dice the cucumber and halve the cherry tomatoes.
- In a large bowl, combine the drained tuna, garbanzo beans, diced cucumbers, cherry tomatoes, and herbs.
- Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently to combine.
- Taste and adjust seasoning if necessary.
- Chill in the refrigerator for about 30 minutes before serving, if time allows.

Serve chilled or at room temperature. Pair with whole grain pita chips or on a bed of greens for a complete meal.
