Ingredients

  • 1 can of tuna, drained
  • 1 can of garbanzo beans, rinsed and drained
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley or cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the garbanzo beans under cold water and drain.
  2. Dice the cucumber and halve the cherry tomatoes.
  3. In a large bowl, combine the drained tuna, garbanzo beans, diced cucumbers, cherry tomatoes, and herbs.
  4. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently to combine.
  5. Taste and adjust seasoning if necessary.
  6. Chill in the refrigerator for about 30 minutes before serving, if time allows.
