Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup garlic mushrooms, sliced
  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp chili powder
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1/2 cup shredded cheese
  • Olive oil for sautéing

Instructions

  1. Season chicken breasts with cumin, paprika, salt, and pepper, then marinate for at least 20 minutes.
  2. In a large skillet, heat olive oil over medium heat and sauté the garlic mushrooms and bell peppers until softened.
  3. Push the veggies to the side and cook the marinated chicken until golden brown and reaches an internal temperature of 165°F, about 6-7 minutes per side.
  4. Add sliced zucchini to the skillet and sauté for a couple of minutes.
  5. Assemble the bowl with sautéed mixture, sliced avocado, and a sprinkle of shredded cheese.
  6. Drizzle with lime juice and top with chopped cilantro before serving.
