Ingredients

- 1 pound button or cremini mushrooms, cleaned and halved if large
- 3 tablespoons olive oil
- 1/4 cup balsamic or red wine vinegar
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon fresh thyme or oregano
- Salt and pepper to taste
Instructions
- Prepare your mushrooms by cleaning them gently with a damp cloth.
- In a skillet, heat olive oil over medium heat, add minced garlic, and sauté for 1-2 minutes.
- Toss in the mushrooms and sauté until golden-brown and tender, about 6-8 minutes.
- Add vinegar, salt, and pepper, stir well and simmer for an additional minute.
- Transfer mushrooms to a bowl, add herbs, and toss everything together.
- Cover and chill in the refrigerator for at least 30 minutes or overnight before serving.
Notes
For added flavor, let the marinated mushrooms sit for longer in the fridge. They can also be served on bruschetta or atop salads.
