- 8 oz rotini pasta
- 1 cup fresh mushrooms (button, cremini, or shiitake)
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 1 cup seasonal vegetables (zucchini, bell peppers, spinach)
- Salt, to taste
- Black pepper, to taste
- Red pepper flakes, to taste
- Fresh herbs (Italian parsley or basil)
- Grated Parmesan, for serving (optional)
Instructions
- Cook the rotini according to package instructions in a large pot of salted boiling water. Reserve 1/2 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add mushrooms and cook until golden brown and tender, about 6-8 minutes, stirring occasionally.
- Add the choice of diced vegetables and continue cooking until just tender. Season with salt, black pepper, and red pepper flakes.
- Return the drained rotini to the skillet. Toss everything together, adding reserved pasta water as needed.
- Finish with freshly chopped herbs and grated Parmesan, if using. Serve hot.

For added richness, you can include protein like chicken or shrimp. Adjust vegetables based on seasonal offerings.
