  • 1 cup fresh mushrooms (button, cremini, or shiitake)
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 cup seasonal vegetables (zucchini, bell peppers, spinach)
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes, to taste
  • Fresh herbs (Italian parsley or basil)
  • Grated Parmesan, for serving (optional)

Instructions

  1. Cook the rotini according to package instructions in a large pot of salted boiling water. Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add mushrooms and cook until golden brown and tender, about 6-8 minutes, stirring occasionally.
  4. Add the choice of diced vegetables and continue cooking until just tender. Season with salt, black pepper, and red pepper flakes.
  5. Return the drained rotini to the skillet. Toss everything together, adding reserved pasta water as needed.
  6. Finish with freshly chopped herbs and grated Parmesan, if using. Serve hot.
