- 4 cups green cabbage, finely shredded
- 2 medium apples, chopped (Granny Smith recommended)
- 1 cup dried cranberries
- 1 cup shredded carrots
- 1 cup mayonnaise (or Greek yogurt alternative)
- 2 tablespoons apple cider vinegar
- 1–2 tablespoons honey (to taste)
- Salt and pepper, to taste
Instructions
- Finely shred the cabbage and place it in a large mixing bowl.
- Chop the apples into matchstick pieces or small cubes, keeping the skin on.
- In a separate bowl, combine mayonnaise, apple cider vinegar, and honey. Stir until well blended.
- Add the prepared cabbage, apples, shredded carrots, and dried cranberries to the mixing bowl.
- Pour the creamy dressing over the coleslaw mix and toss until everything is coated. Season with salt and pepper, adjusting to taste.
- Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.
Notes
For a lighter version, substitute Greek yogurt for mayonnaise. This coleslaw is best enjoyed fresh but can be kept in the refrigerator for up to three days.
