- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract

Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and ginger.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy (about 3-5 minutes).
- Add the egg one by one, mixing well after each addition, then stir in the vanilla extract.
- Gradually add your dry ingredients to the wet mixture, mixing until just combined. Avoid over-mixing.
- If adding mix-ins like chocolate chips or nuts, fold them in now.
- Scoop the dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes or until the edges are golden brown and the centers look slightly underbaked.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For an extra festive touch, sprinkle some coarse sea salt right before baking. Allow cookies to cool completely before storing.
