Description

A comforting and creamy potato soup infused with fresh dill, perfect for chilly evenings and gatherings.

Ingredients

Scale
  • 4 large Potatoes (Russets or Yukon Golds)
  • 1 large Sweet Onion, diced
  • 4 cups Chicken or Vegetable Broth
  • 1/4 cup Fresh Dill, chopped
  • 1 cup Heavy Cream or Half-and-Half
  • 2 tablespoons Butter
  • Salt, to taste
  • Pepper, to taste
  • 2 cloves Garlic, minced (fresh or dried)

Instructions

  1. Melt the butter in a large pot over medium heat. Add the diced onions and sauté until translucent.
  2. Stir in the diced potatoes, allowing them to absorb the flavors for a few minutes.
  3. Add the broth and bring to a gentle simmer. Cook until potatoes are tender, about 15-20 minutes.
  4. Use an immersion blender to puree the soup until creamy, leaving some chunks for texture.
  5. Stir in the fresh dill and cream. Season with salt and pepper to taste, and add a squeeze of lemon if desired.
  6. Ladle the soup into bowls, garnish with additional dill, and serve warm with crusty bread or a salad.

Notes

For a dairy-free option, substitute heavy cream with coconut milk. Add extra vegetables for additional nutrition.
