Description
A comforting and creamy potato soup infused with fresh dill, perfect for chilly evenings and gatherings.
Ingredients
Scale
- 4 large Potatoes (Russets or Yukon Golds)
- 1 large Sweet Onion, diced
- 4 cups Chicken or Vegetable Broth
- 1/4 cup Fresh Dill, chopped
- 1 cup Heavy Cream or Half-and-Half
- 2 tablespoons Butter
- Salt, to taste
- Pepper, to taste
- 2 cloves Garlic, minced (fresh or dried)
Instructions
- Melt the butter in a large pot over medium heat. Add the diced onions and sauté until translucent.
- Stir in the diced potatoes, allowing them to absorb the flavors for a few minutes.
- Add the broth and bring to a gentle simmer. Cook until potatoes are tender, about 15-20 minutes.
- Use an immersion blender to puree the soup until creamy, leaving some chunks for texture.
- Stir in the fresh dill and cream. Season with salt and pepper to taste, and add a squeeze of lemon if desired.
- Ladle the soup into bowls, garnish with additional dill, and serve warm with crusty bread or a salad.
Notes
For a dairy-free option, substitute heavy cream with coconut milk. Add extra vegetables for additional nutrition.
