Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 3 large eggs
  • 1 cup mixed candied fruits (cherries, pineapples, citrus peels)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup almonds or walnuts (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Prepare your baking pan by greasing and flouring it or lining with parchment paper.
  3. In a large bowl, whisk together the flour, baking powder, spices, and salt.
  4. In another bowl, beat the softened butter and sugar until fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  6. Gradually combine the dry ingredients with the wet mixture until just combined.
  7. Gently fold in the candied fruits and nuts.
  8. Pour the batter into the prepared pan, leveling it out with a spatula.
  9. Bake for about 40-50 minutes or until a toothpick comes out clean.
  10. Let it cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For variations, consider using gluten-free flour and experimenting with different types of nuts.
