Description

A rich and decadent chocolate cake with a delightful crunch of pistachios, inspired by the flavors of Dubai.


Ingredients

  • 2 cups all-purpose flour
  • 1 and ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup unsalted butter, melted
  • 4 large eggs
  • 1 cup whole milk
  • 1 cup chopped pistachios (with some reserved for garnish)
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare cake pans by greasing and lining with parchment paper.
  2. In a large bowl, sift together flour, granulated sugar, cocoa powder, baking soda, and baking powder.
  3. In another bowl, whisk together melted butter, eggs, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry mixture and stir until just combined.
  5. Gently fold in half a cup of chopped pistachios.
  6. Divide the batter evenly between prepared cake pans and bake for about 25-30 minutes or until a toothpick inserted comes out clean.
  7. Allow the cakes to cool in pans for 10 minutes before turning them onto wire racks to cool completely.
  8. Create a chocolate ganache by heating heavy cream and pouring over chopped chocolate, stirring until smooth.
  9. Assemble by placing one cake layer on a plate, spreading ganache, and topping with the second layer. Drizzle remaining ganache and sprinkle with pistachios.
  10. Slice and serve to enjoy!

Notes

For a vegan version, substitute eggs with flaxseed meal mixed with water, and use dairy-free butter and milk alternatives.
