Description
A rich and decadent chocolate cake with a delightful crunch of pistachios, inspired by the flavors of Dubai.
Ingredients

- 2 cups all-purpose flour
- 1 and ¾ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- 1 cup unsalted butter, melted
- 4 large eggs
- 1 cup whole milk
- 1 cup chopped pistachios (with some reserved for garnish)
- 2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare cake pans by greasing and lining with parchment paper.
- In a large bowl, sift together flour, granulated sugar, cocoa powder, baking soda, and baking powder.
- In another bowl, whisk together melted butter, eggs, milk, and vanilla extract.
- Pour the wet ingredients into the dry mixture and stir until just combined.
- Gently fold in half a cup of chopped pistachios.
- Divide the batter evenly between prepared cake pans and bake for about 25-30 minutes or until a toothpick inserted comes out clean.
- Allow the cakes to cool in pans for 10 minutes before turning them onto wire racks to cool completely.
- Create a chocolate ganache by heating heavy cream and pouring over chopped chocolate, stirring until smooth.
- Assemble by placing one cake layer on a plate, spreading ganache, and topping with the second layer. Drizzle remaining ganache and sprinkle with pistachios.
- Slice and serve to enjoy!
Notes
For a vegan version, substitute eggs with flaxseed meal mixed with water, and use dairy-free butter and milk alternatives.
