- 4 boneless chicken breasts or thighs
- 2 cups Greek yogurt
- 1 cucumber, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons lemon juice
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: sautéed mushrooms or spinach
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine Greek yogurt, minced garlic, chopped cucumber, dill, lemon juice, salt, and pepper.
- In a greased baking dish, place the chicken in a single layer and pour the tzatziki mixture over the top, ensuring they’re well coated.
- Drizzle with olive oil.
- Cover with foil and bake for about 25-30 minutes. Remove the foil for the last 10 minutes to brown the top.
- Let it rest for a few minutes before serving.
Notes
Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C). For a crispy top, broil on high for the last few minutes, watching closely.
