Ingredients

  • 1 can full-fat coconut milk
  • 8 oz cream cheese (or mascarpone)
  • 1/2 cup sugar (or honey/maple syrup)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine coconut milk, cream cheese, sugar, and vanilla, and beat until smooth (2-3 minutes).
  3. Add eggs one at a time, mixing until fully incorporated after each addition.
  4. Add salt and mix gently; adjust sweetness if needed.
  5. Pour the mixture into the greased baking dish and smooth the top.
  6. Bake for 30-35 minutes, until the center jiggles slightly and edges are golden.
  7. Allow to cool before serving; enjoy warm or chilled.
  8. For a crispy edge, broil for 1-2 minutes at the end of baking.
