  • 2 egg yolks

  • 1/2 cup bittersweet chocolate
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together softened unsalted butter and granulated sugar until light and fluffy (3-5 minutes).
  3. Add egg yolks and vanilla extract, mixing well.
  4. Gradually incorporate flour and cocoa powder to form a soft dough.
  5. Scoop tablespoon-sized balls of dough and place them on the prepared baking sheet.
  6. Create a small indent in the center of each ball using your thumb.
  7. Bake for 10-12 minutes until set but still soft. Cool for 5 minutes on the baking sheet.
  8. For ganache, heat heavy cream until just simmering, then stir in bittersweet chocolate until smooth.
  9. Let ganache thicken and spoon into the centers of cooled cookies.
  10. Allow ganache to set before enjoying.
