- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 3/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1/2 cup bittersweet chocolate
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together softened unsalted butter and granulated sugar until light and fluffy (3-5 minutes).
- Add egg yolks and vanilla extract, mixing well.
- Gradually incorporate flour and cocoa powder to form a soft dough.
- Scoop tablespoon-sized balls of dough and place them on the prepared baking sheet.
- Create a small indent in the center of each ball using your thumb.
- Bake for 10-12 minutes until set but still soft. Cool for 5 minutes on the baking sheet.
- For ganache, heat heavy cream until just simmering, then stir in bittersweet chocolate until smooth.
- Let ganache thicken and spoon into the centers of cooled cookies.
- Allow ganache to set before enjoying.
Notes
These cookies can be stored in an airtight container at room temperature for up to a week or frozen for up to two months. Be gentle when forming dough balls to prevent dense cookies.
