- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 tsp baking powder
- 2 tsp vanilla extract
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C).
- Line a muffin tin with cupcake liners or grease it lightly.
- In a large bowl, cream the softened butter and sugar until light and fluffy, about 3-4 minutes.
- Add eggs one at a time, mixing well after each addition, then add vanilla extract.
- In a separate bowl, sift together the flour and baking powder.
- Gradually add the dry mixture to the wet mixture, alternating with milk, until just combined.
- Spoon the batter into muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Allow to cool for 5 minutes before transferring to a wire rack to cool completely.
Notes
For frosting, use powdered sugar, softened butter, vanilla, and milk whipped until fluffy. Decorate with festive sprinkles.
