Ingredients

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with cupcake liners or grease it lightly.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, mixing well after each addition, then add vanilla extract.
  5. In a separate bowl, sift together the flour and baking powder.
  6. Gradually add the dry mixture to the wet mixture, alternating with milk, until just combined.
  7. Spoon the batter into muffin cups, filling each about two-thirds full.
  8. Bake for 18-20 minutes until a toothpick comes out clean.
  9. Allow to cool for 5 minutes before transferring to a wire rack to cool completely.
