  • 1 cup (240g) Sour Cream
  • 1 cup (200g) Granulated Sugar
  • 3 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 ½ cups (150g) Graham Cracker Crumbs
  • ½ cup (115g) Unsalted Butter, melted
  • 1 tablespoon Ground Cinnamon
  • ½ cup (100g) Brown Sugar

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, melted butter, brown sugar, and cinnamon. Press firmly into the bottom of the prepared pan.
  3. In a separate bowl, beat softened cream cheese with granulated sugar until smooth. Add sour cream, vanilla extract, and eggs one at a time, mixing gently.
  4. Pour the cheesecake filling over the crust, smoothing the top.
  5. Bake for 50-60 minutes or until the edges are set and the center jiggles slightly. Turn off the oven and let the cheesecake cool inside for another hour.
  6. Let the cheesecake reach room temperature before refrigerating for at least 4 hours or overnight.
  7. Mix sugar and cinnamon for the topping. Brush melted butter over the chilled cheesecake and sprinkle with the cinnamon-sugar mix.
  8. Remove the sides of the springform pan and slice to serve.
