- 16 oz (450g) Cream Cheese, softened
- 1 cup (240g) Sour Cream
- 1 cup (200g) Granulated Sugar
- 3 large Eggs
- 1 teaspoon Vanilla Extract
- 1 ½ cups (150g) Graham Cracker Crumbs
- ½ cup (115g) Unsalted Butter, melted
- 1 tablespoon Ground Cinnamon
- ½ cup (100g) Brown Sugar
Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, melted butter, brown sugar, and cinnamon. Press firmly into the bottom of the prepared pan.
- In a separate bowl, beat softened cream cheese with granulated sugar until smooth. Add sour cream, vanilla extract, and eggs one at a time, mixing gently.
- Pour the cheesecake filling over the crust, smoothing the top.
- Bake for 50-60 minutes or until the edges are set and the center jiggles slightly. Turn off the oven and let the cheesecake cool inside for another hour.
- Let the cheesecake reach room temperature before refrigerating for at least 4 hours or overnight.
- Mix sugar and cinnamon for the topping. Brush melted butter over the chilled cheesecake and sprinkle with the cinnamon-sugar mix.
- Remove the sides of the springform pan and slice to serve.
Notes
For a lighter option, consider using reduced-fat cream cheese or Greek yogurt. Experiment with different crust options like crushed nuts or oats.
