- 16 oz Cream Cheese (full-fat)
- 1 cup Granulated Sugar
- 1 cup Sour Cream
- 3 large Eggs
- 1 tsp Vanilla Extract
- 1 ½ cups Graham Cracker Crumbs
- ½ cup Butter (melted)
- 1 tsp Ground Cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the graham cracker crumbs with melted butter and a couple of tablespoons of sugar. Press the mixture into the bottom of a springform pan.
- Beat softened cream cheese with sugar until smooth, then gradually mix in sour cream, eggs, and vanilla extract.
- Add ground cinnamon and swirl it into the filling.
- Pour the cheesecake filling over the crust and bake for 50 to 60 minutes, until set but slightly jiggly in the center.
- Cool to room temperature, then refrigerate for at least four hours or overnight.
- Mix melted butter with sugar and cinnamon just before serving and sprinkle on top.
Notes
For a healthier option, substitute Greek yogurt for sour cream. For gluten-free, use almond flour instead of graham cracker crumbs.
