- 1 cup cream cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup bell peppers, diced
- 1 can diced tomatoes (14.5 oz)
- 4 cups beef broth
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 cup corn (frozen or fresh)
- Toppings: Avocado, shredded cheese, fresh herbs
Instructions
- In a large pot or Dutch oven, heat a bit of oil over medium flame. Add minced garlic and diced onion, sautéing until translucent.
- Add ground beef or turkey and cook until browned, breaking it up as it cooks.
- Toss in diced bell peppers and corn, cooking for a few more minutes until softened.
- Sprinkle in cumin, chili powder, smoked paprika, and salt, stirring to combine. Toast for 1 minute.
- Pour in the broth and add diced tomatoes. Simmer for 15 minutes to meld flavors.
- Stir in cream cheese until melted and fully incorporated.
- Taste and adjust seasoning as necessary. Serve hot with desired toppings.
