  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup corn (frozen or fresh)

Instructions

  1. In a large pot or Dutch oven, heat a bit of oil over medium flame. Add minced garlic and diced onion, sautéing until translucent.
  2. Add ground beef or turkey and cook until browned, breaking it up as it cooks.
  3. Toss in diced bell peppers and corn, cooking for a few more minutes until softened.
  4. Sprinkle in cumin, chili powder, smoked paprika, and salt, stirring to combine. Toast for 1 minute.
  5. Pour in the broth and add diced tomatoes. Simmer for 15 minutes to meld flavors.
  6. Stir in cream cheese until melted and fully incorporated.
