- 2 cups frozen hashbrowns
- 8–10 eggs
- 1 cup milk
- 2 cups shredded cheese (sharp cheddar preferred)
- 1 medium onion, diced
- 1 bell pepper, diced (optional)
- Salt, to taste
- Pepper, to taste
- Garlic powder, to taste
- 2 tablespoons butter
- Fresh herbs, for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, melt the butter over medium heat. Add the diced onions (and bell peppers if using) and cook until soft, about 5-7 minutes.
- In a large bowl, combine the frozen hashbrowns with the sautéed mixture. Season with salt, pepper, and garlic powder. Mix well.
- In another bowl, whisk together the eggs and milk until fully combined. Pour this mixture over the hashbrowns and stir to coat evenly.
- Stir in the cheese, saving some for topping. Distribute the mixture into a greased 9×13-inch baking dish and top with reserved cheese.
- Bake for 45-50 minutes or until the top is golden and the inside is set.
- Let it rest for 10 minutes before serving. Garnish with fresh herbs if desired.
Notes
This casserole can be made ahead of time and stored in the fridge. It can also be frozen for longer storage. Consider adding cooked bacon or sausage for a heartier dish.
