Ingredients

  • Ripe tomatoes (heirloom or vine-ripened)
  • Fresh cucumbers (preferably English)
  • Fresh mozzarella balls
  • Fresh basil leaves
  • Extra virgin olive oil
  • Balsamic vinegar
  • Salt
  • Pepper

Instructions

  1. Wash the tomatoes and cucumbers thoroughly. Slice the tomatoes into thick rounds and the cucumbers into half-moons or rounds.
  2. On a large platter, alternate layers of cucumbers, tomatoes, and mozzarella.
  3. Tear the basil leaves and scatter them on top of the salad.
  4. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste.
  5. Let the salad sit for about 10 minutes before serving.
