- 2 Fresh Cucumbers
- 3 Heirloom Tomatoes
- 8 oz Fresh Mozzarella
- 1/4 cup Fresh Basil
- 3 tbsp Olive Oil
- 2 tbsp Balsamic Vinegar
- Salt to taste
- Pepper to taste
Instructions
- Wash the vegetables thoroughly.
- Slice the cucumbers and tomatoes into rounds.
- Cut the mozzarella into bite-sized pieces or slices.
- In a large bowl, combine the cucumbers, tomatoes, and mozzarella.
- Tear fresh basil leaves and sprinkle them over the salad.
- Drizzle olive oil and balsamic vinegar over the mixture, seasoning with salt and pepper to taste.
- Let the salad rest for about 10-15 minutes before serving.
- Serve on a crisp platter, garnished with additional basil if desired.
Notes
Best enjoyed fresh, but can be stored in an airtight container in the refrigerator for up to 24 hours.
