Ingredients

  • 2 Fresh Cucumbers
  • 3 Heirloom Tomatoes
  • 8 oz Fresh Mozzarella
  • 1/4 cup Fresh Basil
  • 3 tbsp Olive Oil
  • 2 tbsp Balsamic Vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Wash the vegetables thoroughly.
  2. Slice the cucumbers and tomatoes into rounds.
  3. Cut the mozzarella into bite-sized pieces or slices.
  4. In a large bowl, combine the cucumbers, tomatoes, and mozzarella.
  5. Tear fresh basil leaves and sprinkle them over the salad.
  6. Drizzle olive oil and balsamic vinegar over the mixture, seasoning with salt and pepper to taste.
  7. Let the salad rest for about 10-15 minutes before serving.
  8. Serve on a crisp platter, garnished with additional basil if desired.
