Description

A refreshing salad combining crisp cucumbers, ripe tomatoes, creamy mozzarella, and fragrant basil, perfect for summer gatherings.


Ingredients

  • 2 firm cucumbers, sliced
  • 4 ripe tomatoes, chopped or halved
  • 8 oz fresh mozzarella, torn into pieces
  • 1 cup fresh basil leaves, chiffonade
  • 3 tbsp extra virgin olive oil
  • Sea salt and black pepper, to taste

Instructions

  1. Rinse and slice cucumbers and tomatoes.
  2. Tear or slice fresh mozzarella into bite-sized pieces.
  3. In a large bowl, layer cucumbers, tomatoes, and mozzarella. Toss gently.
  4. Add chiffonade basil to the bowl.
  5. Drizzle with olive oil, sprinkle with salt and pepper, and toss lightly.
  6. Let sit for 10 minutes before serving fresh.

Notes
