Ingredients

- 2 firm cucumbers, sliced
- 4 ripe tomatoes, chopped or halved
- 8 oz fresh mozzarella, torn into pieces
- 1 cup fresh basil leaves, chiffonade
- 3 tbsp extra virgin olive oil
- Sea salt and black pepper, to taste
Instructions
- Rinse and slice cucumbers and tomatoes.
- Tear or slice fresh mozzarella into bite-sized pieces.
- In a large bowl, layer cucumbers, tomatoes, and mozzarella. Toss gently.
- Add chiffonade basil to the bowl.
- Drizzle with olive oil, sprinkle with salt and pepper, and toss lightly.
- Let sit for 10 minutes before serving fresh.
Notes
Serve immediately for the best texture. Can add balsamic vinegar or lemon juice for extra flavor.
