  • 2 lbs Beef Chuck, cut into 1-inch cubes
  • 3 Carrots, chopped
  • 2 Potatoes, chopped
  • 1 Onion, chopped
  • 3 cloves Fresh Garlic, minced
  • 2 Shallots, chopped
  • 2 sprigs Fresh Thyme
  • 2 Bay Leaves
  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 1 cup Red Wine (optional)
  • 2 tbsp Olive Oil
  • 2 tbsp Butter

Instructions

  1. Prep the Ingredients: Cut the beef chuck into 1-inch cubes, and chop your vegetables into similar sizes to ensure even cooking.
  2. Brown the Meat: In a large Dutch oven, heat equal parts olive oil and butter over medium-high heat. Add the beef in batches to avoid overcrowding. Brown all sides until nicely seared, about 5 minutes. Remove and set aside.
  3. Sauté the Aromatics: In the same pan, add the onions, garlic, and shallots. Sauté until softened, about 3 minutes, scraping up the brown bits from the bottom.
  4. Combine Everything: Add back the beef, along with the carrots, potatoes, tomato paste, and herbs. Pour in the broth and wine, making sure everything is well combined.
  5. Simmer: Bring the pot to a boil, then reduce the heat to low, cover, and let it simmer for at least 120 to 180 minutes. Stir occasionally and adjust seasoning as needed.
  6. Final Touches: Before serving, taste and adjust the seasoning—salt and pepper can work wonders.
  7. Serve: Ladle the stew into bowls and enjoy warm with a crusty loaf of bread or over fluffy rice.

Notes

For a lighter version, replace beef with hearty mushrooms for a vegetarian twist. Serve with cornbread or green salad.
