- 2 lbs Beef Chuck, cut into 1-inch cubes
- 3 Carrots, chopped
- 2 Potatoes, chopped
- 1 Onion, chopped
- 3 cloves Fresh Garlic, minced
- 2 Shallots, chopped
- 2 sprigs Fresh Thyme
- 2 Bay Leaves
- 4 cups Beef Broth
- 2 tbsp Tomato Paste
- 1 cup Red Wine (optional)
- 2 tbsp Olive Oil
- 2 tbsp Butter
Instructions
- Prep the Ingredients: Cut the beef chuck into 1-inch cubes, and chop your vegetables into similar sizes to ensure even cooking.
- Brown the Meat: In a large Dutch oven, heat equal parts olive oil and butter over medium-high heat. Add the beef in batches to avoid overcrowding. Brown all sides until nicely seared, about 5 minutes. Remove and set aside.
- Sauté the Aromatics: In the same pan, add the onions, garlic, and shallots. Sauté until softened, about 3 minutes, scraping up the brown bits from the bottom.
- Combine Everything: Add back the beef, along with the carrots, potatoes, tomato paste, and herbs. Pour in the broth and wine, making sure everything is well combined.
- Simmer: Bring the pot to a boil, then reduce the heat to low, cover, and let it simmer for at least 120 to 180 minutes. Stir occasionally and adjust seasoning as needed.
- Final Touches: Before serving, taste and adjust the seasoning—salt and pepper can work wonders.
- Serve: Ladle the stew into bowls and enjoy warm with a crusty loaf of bread or over fluffy rice.
Notes
For a lighter version, replace beef with hearty mushrooms for a vegetarian twist. Serve with cornbread or green salad.
