- 1 cup unsalted butter, softened
- 1 cup confectioners’ sugar
- 2 cups all-purpose flour
- 1 cup ground nuts (almonds or hazelnuts)
- ½ cup raspberry jam
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Cream together softened butter and confectioners’ sugar until light and fluffy.
- In a separate bowl, whisk together flour and ground nuts. Gradually add to the butter and sugar mixture, mixing until just combined.
- Wrap dough in plastic and refrigerate for at least 60 minutes.
- Roll out the dough on a floured surface to ¼ inch thick, using cookie cutters to cut shapes.
- Preheat oven to 350°F (175°C) and bake for 10-12 minutes until edges are lightly golden.
- Once cooled, spread raspberry jam on half of the cookies and sandwich with the other half. Dust with powdered sugar.

Let the cookies cool completely before adding jam to maintain texture. Use quality jam for best flavor.
