Description

A light and refreshing salad combining the best parts of the Mediterranean with hearty beans, olives, and fresh vegetables.


Ingredients

  • 1 can Cannellini beans, rinsed and drained
  • 1 can chickpeas, rinsed and drained
  • 1 can black beans, rinsed and drained
  • 2 ripe tomatoes, diced
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1/2 cup Kalamata or green olives, sliced
  • 1/4 cup fresh basil or parsley, chopped
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the beans under cold water.
  2. Dice the tomatoes and cucumbers, slice the red onions, and chop the fresh herbs.
  3. In a large bowl, combine the beans, chopped vegetables, and olives.
  4. Pour in the olive oil and lemon juice, and sprinkle with salt and pepper to taste.
  5. Gently toss everything together until well mixed, and let it sit for at least 10 minutes to allow flavors to meld.
  6. Transfer to a serving dish, garnish with more herbs, and enjoy chilled or at room temperature.

Notes

For added flavor, avoid using old beans, and add the dressing just before serving to maintain the salad’s freshness.
