Instructions
- Preheat your oven to 375°F (190°C).
- Boil the lasagna noodles according to package instructions until al dente.
- In a large mixing bowl, combine ricotta cheese, sautéed spinach, egg, half of the mozzarella, half of the parmesan, and minced garlic.
- Spread a thin layer of marinara sauce on the bottom of a greased baking dish.
- Take a noodle, spread a generous amount of filling over it, and roll it up tightly.
- Place the roll-up seam-side down in the baking dish and repeat until all noodles are filled.
- Pour more marinara sauce over the top and sprinkle remaining mozzarella and parmesan.
- Cover with aluminum foil and bake for about 25 minutes, then remove foil and bake for an additional 15 minutes until bubbly and golden brown.
- Let the roll-ups cool for a few minutes before serving. Garnish with chopped fresh basil or parsley.
Notes
For added texture, consider using a mix of cheeses like feta or gouda in the filling.
