A comforting, savory taco soup that’s easy to prepare and perfect for family gatherings.

Ingredients

Scale
  • 1 lb ground beef or turkey
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 2 tablespoons taco seasoning

  • 2 cloves garlic, minced
  • 4 cups broth (chicken, beef, or vegetable)

Instructions

  2. Add minced garlic and sauté for about 30 seconds.
  3. Add the ground meat, breaking it up and browning nicely.
  4. Mix in the taco seasoning, allowing it to bloom with the meat.
  5. Stir in diced tomatoes, corn, and black beans.
  6. Pour in the broth and bring to a gentle simmer for at least 20-30 minutes.
  7. Taste and adjust seasonings as needed.
  8. Garnish with fresh cilantro, avocado, or cheese before serving.

Notes

Feel free to customize with toppings like sliced jalapeños, sour cream, or any leftover veggies you have on hand.
