- 1 can diced tomatoes
- 1 red bell pepper, diced
- 1 can black beans
- 1 cup corn (canned or frozen)

- 4 cups chicken or vegetable broth
- Fresh cilantro, chopped
- Juice of 1 lime
Instructions
- In a large pot, over medium heat, add a drizzle of olive oil. Once heated, add the ground turkey. Cook until browned, about 5-7 minutes.
- Add diced onions and bell peppers, sauté until softened, about 3-4 minutes.
- Stir in garlic powder, chili powder, cumin, and onion powder, cooking for an additional minute.
- Pour in diced tomatoes, black beans, corn, and broth. Stir and bring to a gentle simmer.
- Reduce heat to low, cover, and let simmer for about 20-30 minutes.
- Before serving, add lime juice and chopped cilantro to brighten the dish.
Notes
