  • 1 tsp onion powder
  • 4 cups chicken or vegetable broth
  • Fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. In a large pot, over medium heat, add a drizzle of olive oil. Once heated, add the ground turkey. Cook until browned, about 5-7 minutes.
  2. Add diced onions and bell peppers, sauté until softened, about 3-4 minutes.
  3. Stir in garlic powder, chili powder, cumin, and onion powder, cooking for an additional minute.
  4. Pour in diced tomatoes, black beans, corn, and broth. Stir and bring to a gentle simmer.
  5. Reduce heat to low, cover, and let simmer for about 20-30 minutes.
  6. Before serving, add lime juice and chopped cilantro to brighten the dish.
