Ingredients

- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable or chicken broth
- 2 teaspoons fresh thyme, chopped
- 2 teaspoons fresh rosemary, chopped
- 2 cups leafy greens (spinach or kale)
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onions, carrots, and celery. Sauté until softened, about 5 minutes.
- Stir in minced garlic and sliced mushrooms, cooking until the mushrooms are tender and fragrant.
- Pour in the canned tomatoes with their juices and add the broth. Bring to a gentle simmer.
- Toss in fresh herbs and season with salt and pepper. Let the soup simmer for 15-20 minutes to meld the flavors.
- Add leafy greens just a few minutes before serving to preserve their color and nutrients.
- Taste and adjust seasoning as needed. Optionally, add red pepper flakes for a bit of heat.
- Ladle the soup into bowls and serve with rustic bread for dipping.

Feel free to substitute vegetables based on what you have. This soup freezes well and can be stored for up to 3 months.
