Delicious egg-filled empanadas that bring warmth and comfort to any gathering.
Ingredients

- 2 cups all-purpose flour
- ½ cup cold butter
- A pinch of salt
- Ice-cold water (as needed)
- 4 fresh eggs
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 diced onion
- 2–3 minced garlic cloves
- Salt and pepper to taste
- Cilantro or parsley (chopped)
- A touch of paprika or cumin
- Sautéed bell peppers or spinach (optional)
Instructions
- Prepare the Dough: In a bowl, mix flour, butter, and salt. Gradually add ice-cold water until the dough forms. Wrap in plastic wrap and chill for 30 minutes.
- Make the Filling: Sauté the onion in oil until soft, add garlic and sauté for 1 minute, then stir in beaten eggs and cook until just set. Remove from heat and mix in cheese, salt, pepper, and herbs.
- Roll Out the Dough: Roll chilled dough to ¼ inch thick and cut out circles (4-5 inches in diameter).
- Fill the Empanadas: Place a tablespoon of filling in the center of each circle, fold over, and pinch to seal.
- Cook the Empanadas: Fry in hot oil until golden brown (2-3 minutes each side) or bake at 400°F (200°C) for 20-25 minutes.
- Serve: Let cool slightly and serve with salsa or your favorite dipping sauce.
Notes
Ensure oil is hot before frying; alternatively, brush with egg wash for a shiny finish when baking.
