Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup eggnog
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 325°F (160°C). Line an 8×8 inch baking pan with parchment paper, allowing overhang for easy removal.
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until crumbly and press firmly into the bottom of the prepared baking pan. Bake for 10 minutes or until golden brown.
  3. In a large bowl, beat the softened cream cheese until smooth. Add granulated sugar and beat until creamy. Mix in eggs one at a time, scraping down the sides as needed.
  4. Pour in eggnog, vanilla extract, nutmeg, and cinnamon. Mix until fully combined but don’t overmix!
  5. Pour the cheesecake mixture over the pre-baked crust and smooth the top. Bake for 45-50 minutes, or until edges are set but the center has a slight jiggle.
  6. Remove from the oven and let cool at room temperature for 1 hour. Then refrigerate for at least 4 hours (or overnight) to set completely.
  7. Use the parchment overhang to lift the bars out of the pan. Slice into squares, and dust with powdered sugar, if desired.

Notes

For a richer flavor, consider using spiced eggnog or adding more nutmeg. Make sure not to overbake to maintain a creamy texture.
