- 1/2 cup fresh espresso
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Prepare your ingredients: Measure all your ingredients and let the eggs and butter reach room temperature.
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans with butter and flour.
- Melt the dark chocolate and butter in a heatproof bowl over a double boiler or in the microwave until smooth; allow to cool slightly.
- In a separate bowl, whisk the sugar and eggs until light and fluffy.
- Gradually combine the melted chocolate mixture with the egg-sugar mixture, mixing gently.
- In another bowl, combine flour, baking powder, and salt. Gradually fold this into the wet mixture, alternating with the brewed espresso.
- Pour the batter into the prepared pans and bake for 25-30 minutes until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to a wire rack. Frost with your favorite espresso-infused chocolate ganache once cooled.
- Serve with a dusting of powdered sugar, whipped cream, or fresh berries.
Notes
For a dairy-free version, use coconut oil instead of butter and plant-based milk instead of eggs. Consider adding a splash of coffee liqueur to your ganache for enhanced richness.
