Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Melt the dark chocolate and butter in a double boiler or microwave until smooth, then set aside to cool.
  3. In a bowl, whisk together the flour, baking powder, and salt.
  4. In a separate bowl, beat the sugar and eggs together until fluffy; stir in the cooled chocolate mixture.
  5. Gradually mix in the espresso until fully incorporated.
  6. Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
