- 1 ½ cups granulated sugar
- 4 large eggs
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ¾ cup freshly brewed espresso
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Melt the dark chocolate and butter in a double boiler or microwave until smooth, then set aside to cool.
- In a bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, beat the sugar and eggs together until fluffy; stir in the cooled chocolate mixture.
- Gradually mix in the espresso until fully incorporated.
- Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Frost with cream cheese frosting or a rich ganache made from the same chocolate and cream.
Notes
Use room temperature eggs and butter for best results. Brush the cooled cakes with a coffee syrup for added richness.
