- 2 tablespoons espresso powder
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3 large eggs
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and line your cake pans.
- Melt the dark chocolate in a heatproof bowl over simmering water until smooth.
- In a separate bowl, whisk together cocoa powder, flour, baking powder, baking soda, and salt.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing until well combined, then add in the vanilla extract.
- Incorporate the melted chocolate into the wet mixture.
- Gradually mix in the dry ingredients and espresso, alternating between each.
- Pour the batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Allow to cool in pans for 10 minutes before transferring to a wire rack to cool completely.
- Frost with chocolate ganache or buttercream as desired.
