  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking soda
  • 3 large eggs
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line your cake pans.
  2. Melt the dark chocolate in a heatproof bowl over simmering water until smooth.
  3. In a separate bowl, whisk together cocoa powder, flour, baking powder, baking soda, and salt.
  4. Cream together the softened butter and granulated sugar until light and fluffy.
  5. Add eggs one at a time, mixing until well combined, then add in the vanilla extract.
  6. Incorporate the melted chocolate into the wet mixture.
  7. Gradually mix in the dry ingredients and espresso, alternating between each.
  8. Pour the batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  9. Allow to cool in pans for 10 minutes before transferring to a wire rack to cool completely.
  10. Frost with chocolate ganache or buttercream as desired.
