Ingredients

  • 4 chicken thighs or breasts
  • 2 tablespoons berbere spice
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 2 tomatoes, chopped
  • Fresh cilantro or parsley, for garnish
  • Juice of 1/2 lemon
  • Olive oil for cooking

Instructions

  1. In a large bowl, marinate chicken pieces with berbere spice, garlic, ginger, and lemon juice for at least 30 minutes.
  2. In a skillet, heat olive oil over medium heat and sauté sliced onions until caramelized (about 7-10 minutes).
  3. Add marinated chicken to the skillet, searing until golden brown.
  4. Toss in chopped tomatoes and deglaze the pan.
  5. Cover and simmer for 20-25 minutes.
  6. Stir in fresh herbs and lemon juice just before serving.
  7. Serve on a platter with injera or rice.

Notes

For a vegetarian option, substitute chicken with tofu and use an alternative spice mix if berbere is not available.
