- 2 ripe mangoes, pureed
- 1 cup passionfruit pulp
- 1 cup mascarpone cheese
- 12 ladyfingers
- 1 cup strong brewed coffee or espresso
- 1 cup whipped cream
- 1 tsp vanilla extract
- Cocoa powder, for dusting
Instructions
- Brew the strong coffee, allow it to cool, and set aside.
- In a large mixing bowl, combine the mascarpone cheese, whipped cream, and vanilla extract; beat until smooth and creamy.
- In a separate bowl, mix the mango puree and passionfruit pulp.
- Dip each ladyfinger into the cooled coffee briefly and layer them in a rectangular dish.
- Spread a layer of the mascarpone mixture over the ladyfingers, followed by a layer of the mango and passionfruit mixture.
- Repeat the layering process until the dish is full, finishing with mascarpone. Dust the top with cocoa powder.
- Chill in the refrigerator for at least 240 minutes or overnight.
- Serve chilled, garnished with additional mango or passionfruit slices if desired.
Notes
For a tangier flavor, consider adding lime zest to the mango layer. Allowing the dessert to rest overnight significantly enhances the flavor.
