Ingredients

  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon

  • 2 large eggs
  • 1/2 cup milk (can use almond or oat milk)
  • 1/2 cup melted butter (or oil)
  • 2 cups grated apples (mix of sweet and tart)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your muffin tin with paper liners or grease with cooking spray.
  3. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, combine the wet ingredients: whisk together melted butter, eggs, and milk.
  5. Fold the grated apples into the wet mixture.
  6. Pour the wet mixture into the dry ingredients and stir until just combined.
  7. Divide the batter among muffin cups, filling each about two-thirds full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow to cool for a few minutes and then transfer to a wire rack.

Notes

For added flavor, consider tossing in some cranberries or walnuts before baking. Store leftovers in an airtight container for up to 2 days or refrigerate for up to a week.
