- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup milk (can use almond or oat milk)
- 1/2 cup melted butter (or oil)
- 2 cups grated apples (mix of sweet and tart)
Instructions
- Preheat your oven to 350°F (175°C).
- Line your muffin tin with paper liners or grease with cooking spray.
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, combine the wet ingredients: whisk together melted butter, eggs, and milk.
- Fold the grated apples into the wet mixture.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Divide the batter among muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool for a few minutes and then transfer to a wire rack.
Notes
For added flavor, consider tossing in some cranberries or walnuts before baking. Store leftovers in an airtight container for up to 2 days or refrigerate for up to a week.
