- 1 cup Unsalted Butter, softened
- 1/2 cup Granulated Sugar
- 1/4 cup Powdered Sugar
- 2 cups All-Purpose Flour (can substitute with whole wheat flour)
- 1 cup Fresh Cranberries, chopped (or dried cranberries)
- 1 tablespoon Orange Zest
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Salt
Instructions
- Soften the butter to room temperature and cream it for 2-3 minutes until light and fluffy.
- Gradually add granulated and powdered sugars, beating until well combined.
- Stir in the orange zest and vanilla extract.
- In a separate bowl, whisk together flour and salt, then gradually mix it into the wet ingredients until just combined.
- Fold in cranberries gently by hand.
- Shape the dough into two logs, wrap in plastic wrap, and chill for at least an hour.
- Preheat the oven to 350°F (175°C).
- Slice the chilled logs into ¼-inch rounds and arrange them on lined baking sheets.
- Bake for 12-15 minutes or until edges are slightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Sprinkle a little sea salt on top after baking for a delightful sweet-salty contrast.
