Ingredients

  • 1/4 cup Powdered Sugar
  • 2 cups All-Purpose Flour (can substitute with whole wheat flour)
  • 1 cup Fresh Cranberries, chopped (or dried cranberries)
  • 1 tablespoon Orange Zest
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Salt

Instructions

  1. Soften the butter to room temperature and cream it for 2-3 minutes until light and fluffy.
  2. Gradually add granulated and powdered sugars, beating until well combined.
  3. Stir in the orange zest and vanilla extract.
  4. In a separate bowl, whisk together flour and salt, then gradually mix it into the wet ingredients until just combined.
  5. Fold in cranberries gently by hand.
  6. Shape the dough into two logs, wrap in plastic wrap, and chill for at least an hour.
  7. Preheat the oven to 350°F (175°C).
  8. Slice the chilled logs into ¼-inch rounds and arrange them on lined baking sheets.
  9. Bake for 12-15 minutes or until edges are slightly golden.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Sprinkle a little sea salt on top after baking for a delightful sweet-salty contrast.
