  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves (optional)
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/2 cup granulated sugar (for rolling)
  • 1 tsp ground cinnamon (for rolling)
  • 1/4 tsp ground nutmeg (for rolling)
  • Pinch of allspice (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together softened butter, granulated sugar, and brown sugar in a mixing bowl until light and fluffy (about 3-4 minutes).
  3. Beat in the egg, eggnog, and vanilla extract until smooth.
  4. In a separate bowl, whisk flour, baking soda, cream of tartar, and spices. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. In a shallow dish, combine granulated sugar, cinnamon, nutmeg, and allspice for rolling.
  6. Form small dough balls (about 1 inch in diameter) and roll in the spiced sugar until coated.
  7. Place dough balls on prepared baking sheets, spaced a couple of inches apart.
  8. Bake for 10-12 minutes until edges are lightly golden and centers are still soft.
  9. Allow to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

For an added touch, sprinkle a tiny bit of flaky sea salt on top of cookies as they come out of the oven for a sweet and salty contrast.
