A delightful puff pastry filled with creamy goat cheese and sweet figs, perfect for gatherings or a comforting meal.

- 1 sheet of puff pastry (thawed if frozen)
- 8–10 fresh figs, chopped
- 4 oz soft goat cheese, crumbled
- 1–2 tbsp honey
- Fresh thyme, for garnish
- 1 egg, beaten with a splash of water (for egg wash)
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a floured surface and cut it into 4-5 inch squares.
- In a bowl, combine goat cheese, figs, honey, salt, and pepper.
- Place a tablespoon of filling in the center of each pastry square and fold corners to seal.
- Brush with egg wash and sprinkle with fresh thyme.
- Bake on a parchment-lined sheet for 15-20 minutes, until golden brown.
- Cool slightly before serving warm.
Notes
Feel free to use pear slices as a substitute for figs if they are out of season.
