Description
A warm and comforting Finnish Salmon Soup filled with tender salmon, potatoes, and fresh dill, perfect for chilly evenings.
Ingredients
- Salmon fillets
- Waxy potatoes (preferably Yukon Gold)
- Leeks
- Carrots (optional)
- Cream (heavy or whipping)
- Fresh dill
- Vegetable stock
- White pepper
Instructions
- Prepare the Ingredients: Clean and chop the leeks, peel and dice the potatoes, and slice the carrots.
- Sauté the Leeks: Melt butter in a large pot over medium heat. Add leeks and cook until soft, about 5 minutes.
- Add the Vegetables: Add diced potatoes and sliced carrots, cooking for another 5 minutes.
- Pour in the Stock: Add vegetable stock, bring to a boil, then simmer until potatoes are tender, around 15-20 minutes.
- Incorporate the Salmon: Cut salmon into cubes and add it just a few minutes before the soup is done to avoid drying it out.
- Finish with Cream and Dill: Lower heat, stir in cream and fresh dill, adjusting seasoning with white pepper and salt. Simmer for a few more minutes.
- Serve and Enjoy: Ladle soup into bowls, garnish with extra dill, and serve with crusty bread.
Notes
Feel free to substitute salmon with any firm white fish and adjust vegetables according to preference.
