Ingredients

- 1 packet Yeast (active dry or instant)
- 1 tablespoon Brown Sugar (can substitute with honey or agave)

- 2 cups Sharp Cheddar Cheese (or Pepper Jack for more heat)
- Spices (cayenne, paprika, garlic powder to taste)
- 1/4 cup Baking Soda (for boiling)
- 1/4 cup Melted Butter (for brushing)
- Coarse Salt (for sprinkling)
Instructions
- Activate the Yeast: In a bowl, mix warm water, a pinch of sugar, and the yeast. Let sit for about 5 minutes until frothy.
- Make the Dough: Combine flour, salt, and remaining sugar in a mixing bowl. Pour in the activated yeast mixture and stir until a dough forms.
- Knead: Transfer dough to a floured surface and knead for 5-7 minutes until smooth.
- First Rise: Place dough in a greased bowl, cover with a damp cloth, and let rise until doubled in size, about 60 minutes.
- Shape the Pretzel Sticks: Punch down dough, divide into pieces, roll into strips about 1/2 inch thick.
- Boil: Boil water with baking soda, drop pretzel sticks in batches for 30 seconds, then lift out.
- Bake: Place on lined baking sheet, brush with melted butter, sprinkle with salt, and bake at 450°F (232°C) for 10-12 minutes until golden brown.
- Make Cheese Sauce: Melt butter, whisk in flour, then slowly add milk and cheddar until smooth, adding spices to taste.
Notes
For an extra twist, sprinkle some garlic powder or everything bagel seasoning before baking.
