Ingredients

- 6 large eggs
- 1 cup cottage cheese
- Chopped fresh herbs (chives, parsley, or basil)
- 1 cup chopped vegetables (spinach, bell peppers, or mushrooms)
- 1/2 cup cheese (feta, cheddar, or mozzarella)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Grease a muffin tin or use silicone molds.
- In a large bowl, whisk the eggs until fully blended.
- Stir in the cottage cheese, fresh herbs, and any additional vegetables.
- Season with salt and pepper to taste.
- Pour the mixture into the muffin tin or molds, filling each about ¾ full.
- Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
- Allow the egg bites to cool for a few minutes before removing them from the molds. Serve warm or cool completely for later enjoyment.
Notes
For fluffier bites, avoid overmixing and allow ingredients to reach room temperature. You can freeze leftovers for up to two months.
