- 1 cup glutinous rice flour
- 2 tsp baking powder
- 2 tbsp sugar
- 1 cup milk (or non-dairy alternative)
- 2 eggs
- 1 cup pork floss
- Butter or oil for greasing
Instructions
- In a large bowl, whisk together the glutinous rice flour, baking powder, and sugar until well combined.
- In a separate bowl, mix the milk and eggs until combined. Slowly pour this mixture into the dry ingredients, stirring gently to avoid lumps.
- Let the batter rest for 10-15 minutes.
- Preheat your skillet over medium heat, and add butter or oil to grease the surface.
- Pour about 1/4 cup of batter onto the skillet for each pancake and flatten gently.
- Sprinkle a generous amount of pork floss on top of each pancake before flipping.
- Cook until bubbles form, then flip and cook for another 2-3 minutes until golden brown.
- Serve immediately with extra pork floss and syrup if desired.
Notes
Avoid overcrowding the skillet and keep pancakes warm in a low oven if cooking for a crowd.
