Ingredients

  • 2 tsp baking powder
  • 2 tbsp sugar
  • 1 cup milk (or non-dairy alternative)
  • 2 eggs
  • 1 cup pork floss
  • Butter or oil for greasing

Instructions

  1. In a large bowl, whisk together the glutinous rice flour, baking powder, and sugar until well combined.
  2. In a separate bowl, mix the milk and eggs until combined. Slowly pour this mixture into the dry ingredients, stirring gently to avoid lumps.
  3. Let the batter rest for 10-15 minutes.
  4. Preheat your skillet over medium heat, and add butter or oil to grease the surface.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake and flatten gently.
  6. Sprinkle a generous amount of pork floss on top of each pancake before flipping.
  7. Cook until bubbles form, then flip and cook for another 2-3 minutes until golden brown.
  8. Serve immediately with extra pork floss and syrup if desired.

Notes
