- 1 tbsp freshly grated orange zest

Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, cream the softened butter and sugar together until light and fluffy, about 3-5 minutes.
- Add the eggs, one at a time, beating well after each addition. Mix in the freshly grated orange zest and juice.
- In a separate bowl, whisk together the flour and baking powder. Gradually add this dry mixture to the butter mixture, alternating with the milk until just combined.
- Spoon the batter into the prepared cupcake liners, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Once cool, frost with a light orange buttercream or simply dust with powdered sugar.
