Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream the softened butter and sugar together until light and fluffy, about 3-5 minutes.
  3. Add the eggs, one at a time, beating well after each addition. Mix in the freshly grated orange zest and juice.
  4. In a separate bowl, whisk together the flour and baking powder. Gradually add this dry mixture to the butter mixture, alternating with the milk until just combined.
  5. Spoon the batter into the prepared cupcake liners, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Once cool, frost with a light orange buttercream or simply dust with powdered sugar.
