Instructions

  1. Preheat your oven to 350°F (175°C) and line your cupcake trays with paper liners.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, beating well after each addition, then stir in the fresh orange juice and zest.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix this dry mixture into the wet ingredients until just combined.
  5. Beat the egg whites in another bowl until stiff peaks form. Gently fold them into the cupcake batter.
  6. Distribute the batter evenly into the prepared cupcake liners, filling each about two-thirds full.
  7. Bake for 18 to 20 minutes, or until a toothpick comes out clean from the center.
  8. Let cool in the tray for 5 minutes, then transfer to a wire rack to cool completely.
  9. For frosting, mix cream cheese, powdered sugar, and orange zest for a light topping.
