Instructions
- Preheat your oven to 350°F (175°C) and line your cupcake trays with paper liners.
- Cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, beating well after each addition, then stir in the fresh orange juice and zest.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix this dry mixture into the wet ingredients until just combined.
- Beat the egg whites in another bowl until stiff peaks form. Gently fold them into the cupcake batter.
- Distribute the batter evenly into the prepared cupcake liners, filling each about two-thirds full.
- Bake for 18 to 20 minutes, or until a toothpick comes out clean from the center.
- Let cool in the tray for 5 minutes, then transfer to a wire rack to cool completely.
- For frosting, mix cream cheese, powdered sugar, and orange zest for a light topping.
