- Prepare the Peaches: Wash, peel and slice the peaches, set them aside.

- Combine Wet Ingredients: In another bowl, combine milk, egg yolks, and vanilla extract. Whisk until blended.

- Whip Egg Whites: Beat egg whites in a clean bowl until stiff peaks form.
- Fold in Egg Whites: Gently fold the whipped egg whites into the batter until no streaks remain.
- Cook the Pancakes: Heat a non-stick skillet over medium heat, grease it, pour 1/4 cup of batter per pancake, and sprinkle with peach slices. Cook until golden brown, then flip and cook the other side.
