Instructions

  1. Separate the eggs. In one bowl, beat the egg whites until they form stiff peaks.
  2. In another bowl, combine the egg yolks, milk, sugar, vanilla, and salt. Whisk until blended and creamy.
  3. Sift in the flour and baking powder, and gently fold until just combined.
  4. Gently fold in the egg whites to maintain airiness.
  5. Preheat a non-stick skillet over low to medium heat and add butter or oil to coat.
  6. Spoon the batter into the pan, forming rounds, and cover with a lid for 2 minutes.
  7. Cook until golden brown, then flip and cook for 2-3 minutes more.
  8. Serve stacked high with your favorite toppings.
