Instructions
- Separate the eggs. In one bowl, beat the egg whites until they form stiff peaks.
- In another bowl, combine the egg yolks, milk, sugar, vanilla, and salt. Whisk until blended and creamy.
- Sift in the flour and baking powder, and gently fold until just combined.
- Gently fold in the egg whites to maintain airiness.
- Preheat a non-stick skillet over low to medium heat and add butter or oil to coat.
- Spoon the batter into the pan, forming rounds, and cover with a lid for 2 minutes.
- Cook until golden brown, then flip and cook for 2-3 minutes more.
- Serve stacked high with your favorite toppings.
Notes
For extra flavor, try adding cinnamon or lemon zest. Serve with fresh fruit, syrup, or whipped cream.
